I made this a long time ago for a blog post but never publish it. I just found the pictures, but not the actual recipe, so I don't have precise measurements. Still, I wanted to give you an idea of something a little different. So, here you have Pot Stickers my way. For the filling, I used chicken (breast, cubed), lemon zest and juice, garlic, onion, red roasted peppers, green olives and mozzarella (shredded) You will also need some chicken stock. (about 1/4 cup) Mix it all up and add salt and pepper to taste ( or adobo if you prefer) Now for the wrapper. You can buy wonton wrappers or make your own.. 1.5 cups flour 1/2 cup cold water 1 teaspoon salt Mix the flour, salt, and water together and form a uniform smooth dough. Let the dough rest for 30 minutes. Divide the dough into about 32 pieces. Roll each into circles or squares. Fill with the chicken mix. use a bit of water on the edge, try to press out all the air and ensure they are tightly sealed In a large skillet heat 1 tbsp olive oil, dumplings for 1 minute or until golden on one side add 1/4 cup of chicken stock into the pan, reduce heat to low, cover and cook, without turning for about 7 minutes or until the dumpling is translucent and most of the liquid has evaporated Uncover and on higher heat cook for another 5-7 minutes or until the bottoms are dark brown, drain put on a platter and keep warm. Enjoy!
